POTATO
SALAD |
| Ingredients: |
* 1 tsp Rock Salt
* 4 tbsp Sesame Oil
* 4 medium Potatoes
* 2 tsps Vegetable Oil
* 3 tbsps Lemon Juice
* 10-12 Fenugreek seeds
* 3 tbsp Coriander leaves
* 1 Green Chilli, finely minced
* 4 tbsp ground roasted Sesame seeds |
| Method: |
1. Boil the potatoes in a big
pot.
2. Meanwhile, combine the chilli, salt, lemon
juice and ground roasted sesame seeds in a non-metallic
bowl.
3. Add the sesame oil just a little at a time
and mix well.
4. Heat the vegetable oil and when quite hot,
add fenugreek seeds.
5. When the seeds start to darken pour it into
the bowl.
6. Mix well, then add coriander leaves.
7. When the potatoes are done, drain and peel
while hot.
8. Cut into cubes and add to the bowl of dressing.
9. Gently mix to coat all the cubes.
10. Let cool, cover and refrigerate. |
